Sourdough Starter

This is a bit different one, since maintaining a sourdough starter is an on-going process rather than a one-and-done recipe. But I'll shove it into my recipe format since I don't have a better idea. I'll leave lots of notes on this one.

Ingredients

Steps

  1. Collect a small amount of starter from your previous batch. This doesn't need to be much, it could be as little as half a gram. I never measure, I just scrap up a bit from the bottom of the jar, it's likely less than 5 grams.
  2. Dissolve your bit of starter into the water. Stir in the flour and mix well.
  3. Let the starter sit for approximately 12 hours, it should more than double in size.
  4. Discard most of the starter, and start again.
